Why breeches, not leggings or jeans
Riding-specific bottoms are engineered for the contact points and movement patterns that general activewear isn't. The fabric needs to move with you through posting trot and two-point, resist wear at the inner knee and seat, and stay smooth against the saddle without bunching or shifting. Jeans create pressure points. Standard leggings don't have the structure or grip to support the ride.

Full seat or knee patch
Both styles have their place, and the right choice depends largely on your discipline and how you prefer to feel your horse beneath you.
Full seat grip covers from seat to knee, offering consistent contact with the saddle. This makes it a natural choice for dressage riders, where the depth of the seat and steadiness of the position are central to the work. Many eventers and western riders prefer full seat as well.
Knee patch grip is more concentrated, providing traction at the knee while leaving the inner thigh and seat freer. Jumpers and hunter riders often favour this style for the range of movement it allows through transitions and over fences.
